TASTING NOTES

Our Bordeaux Cab Sauv leaps from the glass with dark berry, currant and smoke aromas. These aromas are echoed on the palate, where blackberry, cassis and chocolate flavors are framed by ripe, supple tannins. A dense, attention-grabbing, full-flavored and robust example of what Bordeaux does best.

Seared duck breast with red wine reduction (using the same wine of course), filet mignon, gratin dauphinoise, hearty green beans with bacon.
DOMAINE

This historic domaine dates back centuries, and its steep, south-west facing, rocky vineyards boast an expansive view of the Garonne River from their heights. Not a terroir for feeble vines, the low yields of intensely concentrated grapes produce sublime, textured, detailed and explosively fruity red wines.

TERROIR
The Bordelais have been producing wine for centuries, and through hard work, dedication to their craft, and an early embrace of international markets, Bordeaux winemakers have earned their reputation as among the finest in the world. Our Cabernet Sauvignon is grown in a clay-rich, stony terroir that allows for optimum fruit expression and consistent, even ripening.
WINEMAKING

While yesterday’s Bordeaux reds were rough, rugged wines with angular tannins and a green streak on the palate, today’s talented Bordeaux winemakers have learned a thing or two about working with this exigent variety – allowing the grapes to ripen properly on the vine, controling for oxidation in the cellar and gently extracting Cab Sauv’s grippy tannins. Origine de Lynch Bordeaux Cab was carefully made in this tradition, and the result is a fruity wine, with supple tannins and a long, finish that echoes Bordeaux’s mineral-rich soils.
